From our best blocks, these grapes were picked in excellent balance of phenolic and acidity balance. Winemaking in little vats with temperature controlled at 24ºC, followed by extended cold skin maceration over 24 hours. Aged during 6 months in oak barrels.
Tasting Note
Red dark color. Wildberries aromas and dark chocolate hints. Full bodied on the palate with smooth tannins and a lingering finish.
Food Suggestions
This João Santarém is a perfect match with wild boar roasted or stewed, rabbit hunter’s style, grilled salmon with smoked black tea or codfish with aromatic spicies.
